The research is directed at understanding the genetic and molecular bases of wheat technological and nutritional properties, and at the manipulation of wheat kernel composition in order to obtain new wheat genotypes with improved properties. In particular, the research is focused on wheat kernel proteins related to dough technological quality (gluten proteins), to adverse reactions to wheat (such as celiac disease, wheat sensitivity, wheat allergies), and to the increase of nutritional properties, by using classical and biotechnological approaches including genome editing by CRISPR-Cas9
